Third breakfast recipe: scrambled eggs with eggplant & garlic.

For this recipe, you’ll need the following ingredients:

  • 6 whole medium eggs
  • 1 eggplant
  • 3 garlic cloves
  • argan oil
  • white pepper & cumin spice

Ingredients you'll need for this breakfast recipe


Start by taking your pan & putting the heat to low. Add enough argan oil to coat the bottom of the pan. One tablespoon should do it.

Chop the eggplant & garlic. Let them fry in your pan.

In the meanwhile, break your eggs into a bowl. Beat the eggs if you want them perfectly scrambled.

After a few minutes, the eggplant & garlic should be fried.

Pour the eggs. I scramble them in the pan.

Cook until eggs are firm. Then serve on a plate.

Spice it up with white pepper & cumin. You’re ready.
Serve on a plate, add white pepper & cumin


For your info, this is the nutritional value of this breakfast recipe:

  • Protein: 42 grams
  • Carbohydrates: less than 10 grams
  • Fats: 50 grams
  • Calories: approx. 650 kcal

If you need more calories, just up the quantities.

    Don’t you think 50 grams is a little bit too much fat? I try to get +/-30% of my daily calorie intake from fat, meaning that 50 grams would already make up for >40% of my daily fat.

    Maybe swap 2-4 whole eggs for only the eggwhite?

    Eq_909 thanks for the question.

    The 50g fat comes from:
    * 1 tablespoon argan oil = 15g fat
    * 6 whole eggs = 35g fat

    If you’re on a typical 30P/40C/30F diet, 50g fat might be too much. You could remove the yolk, but that would also remove all the vitamins. I’d recommend going for less argan oil/less eggs.

    I don’t consume a lot of carbs (less than 100g a day), so this kind of breakfast perfectly fits me.

    Could you make a blog about the reason behind eating such small amounts of carbs? I easily eat 100 gram carbs in one meal :D

    To make a long story short: I feel better when eating only proteins, fats, veggies & fruit.

    My health has improved by shifting to a diet that emphasizes protein, fat, and low gycemic fruits; and vegetables for carbs. (I’ve eliminated bread, potatoes, and grains).

    I like the eggs and garlic - I just can’t get onboard with the egg plant. I’ve tried, but eating eggplant to me is kind of like eating nopales (cactus), or squashes - the texture and bland flavors just don’t appeal to me. I think I’ll stick to bell peppers.

    Same here: high protein, high fat, no carbs. Better health, less inflammation, less tired, leaner,… Only advantages to me.

    Eggplants are delicious to me, but you can’t discuss tastes of course. I had eggs with bell peppers this morning ;-)

    This looks like a great recipe. But are you eating the entire skillet by yourself? I’m getting into cycling, and I consume my share of calories (esp. for a 24-year-old guy), but that seems like a huge breakfast. Maybe my meals are really that out-of-whack.

    Yes, I eat the entire skillet by myself. At 3000kcal a day, 650kcal is just what I need. I could probably eat even more.

    If you do a lot of cycling, I suppose you’d get +3000kcal a day, a 650kcal breakfast would be a minimum.

    It’s a huge breakfast and just what you need after a long night without food. Great way to start the day.

    Try eating smaller meals before sleeping, makes you more hungry on waking up.
