but i was wondering which one works the most amount of muscle ? and also i am curious to know the extent at which they strengthen the posterior deltoid...

I believe the difference between these two lies in the biceps. You can compensate for having a weak biceps by pulling feet forward and up, thereby changing the body position relative to gravity, and through that reducing the load on the biceps.
I`ve done pulldowns lately and the biggest difference between pulldowns and chins as I see it, lies in the use of biceps. Pulling feet forward makes the lift more like a pulldown.
