    I really debated about starting a log. This journey gets very personal at times. It's hard to announce to the world things you didn't even want to admit to yourself. But that's why I did it. It needed to be right in front of me so I could deal with it head on. And I needed support to get through it. Who would have thought I'd find that here of all places. :lol: But I did. Hey guys,

Ive been trying to cut all the starchy carbs out of my diet. Ive been going really well for the last 6 weeks, losing a bit of weight and adding strength slowly. The only problem is Im starting to get sick of eating eggs in the morning. I'm running out of ways to cook them and am hoping you all have some alternatives that I can use to mix it up a bit. I'm starting to go back to my old ways (breakfast only) and want to catch it before I go back to my old ways completely. I had weetbix for breakfast today which I know isnt great but Ive eaten so many eggs I just needed the change. Thanks

There's no reason why you can't eat any kind of protein you want at breakfast time.

i have 6 weetbix and 250ml milk (22g protein)
little tin of kidney beans (5g protein)
and a protein shake.

minimal preparation time (eg 5 seconds) is its major virtue.

are you trying to cut weight? do you eat carbs through the day as well?

Sometimes the problem isn't a lack of variety, but rather an abundance of variety. You should try to find some staple meals, the type of meal that you can eat day-in, day-out. I personally dislike eggs, but I have an omelet that I can eat almost daily, and it still tastes good.
I use:
-3 eggs
-1/2 cup of egg whites
-1/4 cup of feta cheese
-large handful of baby spinach
-diced sun-dried tomato, or sliced fresh tomato
-2 Tbsp sliced olives
-garlic

It has a Greek feel to it, so if you are into that it is quite good.

Another option:
-tuna
-cottage cheese
-olive oil
-rosemary
-diced sun-dried tomato

Combine the above in a bowl and enjoy. No cooking, and only a bowl and spoon to clean up after.

I don't really like egg with nothing on it so I am getting cottage cheese on top of it. Really good! :)

If you don't mind doing a bit of baking, Persian cuisine contains (as a rough exaggeration) about 50 thousand recipes for kuku, which are like frittatas or Spanish tortillas but better. They're fine to bake in the afternoon and leave out overnight, or in the fridge. A link to one recipe here, and there are dozens more in Batmanglij's New Food of Life or Ramazani's Persian Cooking (IMO the two best Persian cookbooks in English).

If you find eggs a bit boring try adding pesto to the scrambled eggs, it add some cheese/olive oil and pine nuts for much needed fat, as well as adding the flavour of the basil.

Pour salsa on eggs
I also like to premake 'skillet' veggies to use (potatoes, peppers, onions) pre bake the potatoes, freeze them in a single layer on a cookie sheet and freezer bag em. Then use 1.5 cups veggies, sautee pre diced peppers and onions with frozen potatoes (potatoes will be warmed through when veggies are ready) I then use 2 - 4 eggs and I also will dice up some canadian bacon and toss in when sauteeing the veggies... Is really good and filling too. Sometimes I will make this combo, toss it in some corn tortilla's with some cheese sprinkled on the top for a breakfast burrito...
