I train in the AM. So breakfast is my pre workout meal. It consists of proteins & fats. I avoid carbohydrates in my pre workout meal, as it doesn’t make me feel well during training. Anyway this is one of my breakfast recipes.

You’ll need the following ingredients:

  • 5 whole medium eggs
  • 100 grams ground round (extra lean)
  • half a zucchini
  • 1 tomato
  • olive oil (extra virgin, cold pressing)
  • cumin spice

Start by taking your pan & putting the heat to low. Add enough olive oil to coat the bottom of the pan. One tablespoon should do it.

Chop the zucchini & tomato. Let them fry with the ground round in your pan.

In the meanwhile, break your eggs into a bowl. Beat the eggs if you want them perfectly scrambled.

After a few minutes, the zucchini, tomato & ground round should be fried.

Pour the eggs. I scramble them in the pan.

Cook until eggs are firm. Then serve on a plate.

I add camun. It makes it taste even better.

Don’t forget to clean up the dish ;-)

For your info, this is the nutritional value of this breakfast recipe:

  • Protein: 55 grams
  • Carbohydrates: less than 10 grams
  • Fats: 40 grams
  • Calories: approx. 650 kcal

If you need more calories, just up the quantities.

    Mine are simple and thrown together they follow the same basic model. warm pan with oil, Brown meat, heat veggies, Add eggs (on high heat), serve warm. Probably my most common one is:
    Sausage and minced garlic - heat
    onions and bell peppers - heat
    mix eggs with basic italian seasoning mix found a the store
    add eggs to heat (on high)
    serve on a warm tortilla with cheese and salsa to taste.

    I’ve done omelettes with garlic/onions/bell peppers, but not the way you describe. Will put this on my to do list ;-)

    Want to make the zucchini even tastier? Chop it up after waking and mix with salt. Let it sit until you are ready to cook. Drain and pat dry, then cook as usual.

    I normally letjulienne sliced zucchini sit for an hour and then saute in butter, but you obviously do not have that much time in the morning.

    You could prepare the zucchini the way you described the night before, while preparing supper.

    Putting it in salt the night before may drain too much water from the zucchini but it’s worth a try. I’ll try it tomorrow.

    This technique works for other food items too. Such as eggplant.

    Just wondering, since I’m the kind of guy who likes to budget his time in the morning before heading off to work, is it possible to freeze scrambled eggs and reheat them in the microwave?
